Job Responsibilities:
- Reviews menu and special orders to determine types and quantities of food items to be obtained and prepared.
- Follows standardized recipes in preparation of all foods.
- Plans cooking schedule with supervisor and/or dietitian to ensure food will be ready at specified times.
- Ensures that all foods prepared meet existing standards for quality, freshness, taste and appearance.
- Confers with dietitians regarding modified diet preparation and use of leftovers.
- Adheres to HACCP guidelines in the food storage, handling and preparation and in the sanitation and maintenance of work area.
- Ensures that all cooking equipment and utensils are inspected and maintained for cleanliness and proper operation.
- Alerts supervisor to problems and needs concerning equipment and food supplies. Detects and reports spoiled or unattractive food, defective supplies/equipment or other unusual conditions.

Education:
- High school diploma or equivalent preferred.
Certifications:
- None required.
Complexity of Work:
- Requires the ability to work with minimal supervision
- Must be able to work in a stressful environment and take appropriate action.
Work Experience:
- Sufficient previous experience in large scale food preparation; two or more years related experience preferred.
- Knowledge of cooking methods/procedures, including types of preparation and related routines.
- Training in institutional food preparation preferred.
Physical Requirements:
- Regularly required to stand, walk, use hands to manipulate objects for tools, reach with hands and arms, stoop and lift or move objects up to 75 pounds.
- Position requires normal or corrected vision.
Personal Protective Equipment:
- Follows standard precautions using personal protective equipment as required.
